Easy Summer Watermelon Salad Recipe

Watermelon Feta Salad

When you think of watermelon the words refreshing, summer, and sweet might come to mind and this recipe is exactly that. This recipe has been featured in this summer’s Wellness in the Schools newsletter and there is definitely a reason why! 

I absolutely love watermelon and it has been my favorite fruit since I was a kid. It made New York City summer nights bearable. I can remember the exact moment I fell in love with watermelon - I was 6 years old on a cruise ship traveling the Caribbean Islands on vacation with my parents.  I discovered this amazing fruit at the buffet station and once the waiters caught on that I was obsessed they continued to feed my habit.  They would bring me platter after platter on the pool deck. I was in heaven!

Since starting my wellness journey, I have been trying to understand the different types of foods I put in my body. I like to find foods that will not only satisfy my cravings but also give me fuel power to work 14-hour days, 5 to 6 days a week. Being aware of what you put into your body is essential to living a long and healthy life which is why I feel like it is important to educate everyone, including children, about healthy choices. 

Watermelon is not only a great snack but it also has a lot of powerful health benefits such as compounds that may help prevent cancer, lower inflammation, help relieve sore muscles, and help improve heart health. 

The Watermelon Feta Salad Recipe I have for today is both easy and refreshing. It is my go-to summer dish and hits the spot every time. 

Ingredients

1 medium seedless watermelon

3 limes, juiced

¼ cup olive oil

1 ½ tsp of salt

¾ tsp ground pepper

½ cup fresh mint, chopped

½ cup crumbled feta cheese

Steps

  1. Cut watermelon into 1”l bite-sized cubes

  2. Combine lime juice, olive oil, and salt and pepper in a small bowl to create a dressing

  3. Pour dressing over watermelon cubes and toss gently to coat

  4. Gently mix in the fresh mint and feta cheese

  5. Enjoy

This salad is best made just prior to serving
